Mouth full of healthy goodness......

Here is some fun, colourful and quick mealtime recipes...Let's get started with healthy eating...
Fresh Charred Pepperbell, Tomatoes and Herb Salad with Cottage Cheese
YIELD: 4
~ 200gm Cottage cheese, cut into thin slice
~ 3no Pepper bell, preferably in different colours, charred, peeled and steamed
~ 1 pkt Cherry tomatoes, roasted in the oven over a high temperature
~ 3 no Oranges, section/segment the oranges
~ 50 gm Raisins
~ 40 ml Olive oil
~ +/- Ground black pepper
~ Orange vinaigrette or balsamic vinegar
~ A handful Mixed salad leaves, washed and spun dry
~ 2 no Garlic, give it a good mash
~ 40 gm Roasted walnuts
~ +/- salt
~ A handful
~ Fresh basil
Method of Preparation: In a bowl, drizzle the orange segments, raisins, cherry tomatoes and pepper bell with a good splash of the orange vinaigrette or the balsamic vinegar, the lemon juice and some olive oil. Season with some salt and pepper to taste. Preheat a saucepan and give it a reasonable dash of olive oil, press a basil leaf onto a slice of cottage cheese, into the frying pan. Turn over carefully. It takes about 1 minute for each side, until it is light golden. Dish out the cottage cheese, toss the mix salad leaves along with the basil, walnuts and speck it over the cheese. To finish, drizzle some olive oil and vinaigrette.
My personal favourite, get a slice or two of a freshly baked mixed grain loaf, toast the bread either on a toaster or a griddle pan. Next, rub some fresh garlic on the toast, place the cottage cheese on to the bread slice and smack a handful of the well tossed salad right on top...mouth full of goodness!
Variations: Top it with some smoked salmon, some leftover roast chicken and fresh dill....
